Although we have said goodbye to summer and feel the evenings drawing in, it is still important to maintain regular exercise to keep you active and feeling energized.

Did you know that research shows on average women lose 1% muscle mass per year after the age of 30.  Muscle is living tissue which needs energy day and night.  So when you lose your muscle, your need for energy will drop, you will store more fat and therefore start to gain weight.

Recipe tip……

 

You can’t beat a good homemade soup when the evenings get chilly and soup is a quick but nutritional alternative for supper. This Potato and Leek soup is really simply to make and only 110 calories per bowl.

Serves 6

Ingredients:

4 medium leeks (dark green stems removed). Alternatively you may purchase bag of pre-cut leeks from the local supermarket.

Half large white onion chopped

2 medium size potatoes peeled and cut into cubes

1 tbsp flour (use gluten free flour for GF)

1tbsp butter

950ml fat free chicken stock (or vegetable stock)

100ml low fat milk

Salt and fresh pepper

 

1.  Wash leeks carefully to remove all grit. Then cut them horizontally and separate the rings. Coarsely chop.

2.  In a medium pot melt butter and add flour on low flame. Using a wooden spoon mix well.

3.  Add the stock, leeks, onion and potatoes and bring to the boil.

4.  Cover and simmer on low for about 20-25 minutes until potatoes are soft.

5.  Using a blender, blend the soup until smooth, adding the milk and adjusting salt and pepper

to taste. Serve immediately.
